what you'll need:
1 tbsp vegetable oil (i used canola)
2 eggs lightly beaten (i left the eggs out because mine were expired and i don't really like egg in fried rice)
1/4 cup low sodium chicken broth (i used more like half a 14.5oz can)
1 cup frozen stir fry veggies, thawed
2 tbsp low sodium soy sauce
2 cups minute white rice, uncooked (i used uncle ben's fast and natural instant brown rice)
1/2 cup water
2 cups cooked chicken, chopped
heat the oil in a large skillet over medium heat. add the rice and brown slightly (about 3 minutes). add eggs; scramble until throughly cooked. add broth, vegetables, chicken, water, and soy sauce; bring to boil. remove from heat and let stand 5 minutes.
my alterations: since i didn't use minute rice, i add more chicken broth and added some water and let it simmer about 10 minutes, like you're making rice a roni.
